I like to eat healthy food as a matter of habit but sometimes it’s hard. If you just want a quick snack preparing something healthy can all seem a bit too much bother but there are plenty of very quick, very easy and affordable ways to avoid the biscuit tin or reaching for a loaf of bread.
Here I show you a basic bean salad which only takes 3-4 minutes to make and costs around £1.25 to make, yet it will serve as a snack or side for 2 people!
The ingredients again, in case you missed them;
- 1 x can of mixed pulses in water, rinsed and drained
- 1 x tomato, diced small
- 1/4 of an onion, finely chopped
- 1 tbsp of chopped, fresh mint and coriander
- A pinch of finely grated lemon zest (optional)
